Recently, we tossed one of these Quest Bars in the oven for a few minutes and it tastes incredible. What it’s missing is a bit of ice cream. If you rather not opt for the real stuff (which is fine in moderation), try Kalene’s Greek Yogurt “ice cream” recipe. Check out how many calorie are in a typical Cookies & Ice Cream dessert at a restaurant–nearly 900 calories for just dessert is crazy!

How did we make this amazing concoction? Simple, grab a Chocolate Chip Cookie Dough Quest Bar (we sell these if you need some) and a Dannon Light & Fit Vanilla Greek Yogurt. The trick is to freeze the Greek yogurt for 10-15 minutes to let it setup into a “ice cream consistency”. Yes, we know it’s not the real thing but if you’re on a lower carb diet, this is a perfect alternative. Preheat your oven to 275 degrees. Microwave your Quest Bar for approximately 5 seconds to soften to be rolled out on a cutting board using a rolling pin. Once the Quest Bar is rolled to approximately half it’s original thickness, cut it half to make 2 cookies. Bake  each “cookie” for for 8-12 minutes until lightly crisp on the edges. Top your cookies with with 2 large spoon fulls of your Green yogurt ice cream and add a few sprinkles if you’d like.  Happy eating!
